Ingredients

  • 1/2 c. butter
  • 1-2 teaspoon paprika
  • 1 pound cut up lobster meat
  • 1/2 c. sherry
  • 1 c. light cream
  • 3 egg yolks
  • 1 teaspoon brandy

Directions

  1. Heat butter in skillet over low heat. Add in paprika and lobster meat. Heat till meat is pink. Add in sherry and cook till wine is reduced. Beat together egg yolks and cream and stir into skillet. Sauce shouldn't boil. Over cooked egg yolks will sauce mix to curdle. Stir in brandy and serve on toast points or possibly prepared frzn pastry shells. Makes about 6 servings.
