Lo Fat Stuffed Baked Potatoes

Ingredients

  • 2 c. Idaho potatoes, baked
  • 1/4 c. low-fat cottage cheese
  • 1 teaspoon minced fresh chives
  • White pepper

Directions

  1. Preheat oven to 325 degrees. Cut potatoes in half and carefully scoop out the pulp. Reserve 2 of the skins. Whip cottage cheese till smooth in a blender or possibly food processor. Combine potato pulp, cottage cheese, chives, and pepper and blend well. Stuff into potato skins. Bake till heated through, about 20 min.
