Lo Cal Pumpkin Raisin Muffins

Ingredients

  • 1 c. flour
  • 1 1/3 c. dry lowfat milk pwdr
  • 9 pkg. artificial sweetener
  • 2 tbsp. brown sugar
  • 1 teaspoon baking soda
  • 1 teaspoon baking pwdr
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla
  • 1/4 teaspoon ginger
  • 4 tbsp. reduced cal butter
  • 1/4 teaspoon salt
  • 1/4 teaspoon cloves
  • 1/4 teaspoon nutmeg
  • 1/2 c. raisins
  • 1 (15 ounce.) can (1 1/2 c.) pumpkin or possibly squash

Directions

  1. Heat butter; mix dry ingredients together, add in melted butter and pumpkin. Mix together. Mix in raisins. Bake at 350 degrees for 20 to 25 min. Makes 12 muffins. Use Pam on muffin tin; don't use papers or possibly they will stick.
  2. WW: 3 muffins = 1 bread, 1 1/2 fat, 1 fruit, 3/4 vegetable, 1 lowfat milk, 60 optional calories.
