Ingredients

  • 2 skinned, boneless chicken breasts, halved & pounded to 1/4" thickness
  • 2 slices Mozzarella cheese
  • 2 slices ham (honey ham works well)
  • 1 lg. egg white
  • 1 tbsp. water
  • 1/2 c. spiced bread crumbs
  • 1 tbsp. butter

Directions

  1. 1. Whisk egg white and water together. Place bread crumbs on a plate. Dip one side of chicken breast into egg white and then into bread crumbs.
  2. 2. Heat butter in skillet and add in coated chicken breasts. Brown one side only.
  3. 3. Roll cheese inside of ham slice. Place in center of chicken breast, like a jelly roll. Secure with toothpicks.
  4. 4. Bake in a preheated 350 degree oven for approximately a half hour. Don't cover while coating.
