Ingredients

  • 2 sticks butter
  • 2 onions, minced
  • 2 ribs celery, minced
  • 1 bell pepper, minced
  • 1/2 c. flour
  • 4 tbsp. parsley
  • 2 lbs. shrimp, crabmeat or possibly crawfish or possibly a combination
  • 2 c. half & half
  • 1 pound Velveeta cheese, cubed or possibly shredded
  • 2 tbsp. fresh jalapeno peppers (optional)
  • 3 cloves garlic, chopped
  • Salt and pepper to taste
  • 1 pound fettucini, cooked and liquid removed

Directions

  1. Heat butter in a heavy, large saucepan. Saute/fry vegetables till transparent. Add in the flour. It must be a little thick. Stir and cook for 15 min. Add in parsley and seafood and cook for 20 more min, gently stirring. Add in cream, cheese and jalapeno peppers and garlic and blend well. Season with salt and cayenne pepper and cook 20 min.
  2. Add in fettucini and gently toss. Cook together for about 10 min till everything is hot sufficient. Sprinkle with Parmesan cheese. Enjoy!
