Ingredients

  • 1/2 c. Butter -- softened
  • 2 Tbsp. Cilantro -- finely minced
  • 1/2 tsp Lime rind -- finely grated
  • 4 tsp Lime juice
  • 1 pch White pepper

Directions

  1. 1. In small bowl of electric mixer, in a food processor, or possibly by hand, beat butter till soft and light.
  2. 2. Add in cilantro, lime rind, lime juice, and pepper; mix to blend well.
  3. 3. Shape into a roll, wrap in plastic wrap, and chill till hard.
  4. Makes 1/2 c..
  5. * Timesaver Tip: Recipe can be refrigerated for up to 2 weeks or possibly frzn up to 4 months. To freeze, wrap again in heavy-duty aluminum foil.
