Ingredients

  • 3/4 lb Fresh chicken livers
  • 4 x Hard boiled Large eggs
  • 1 med Onion, grated
  • 1/2 c. Rendered chicken fat Salt and pepper to taste

Directions

  1. Broil the livers or possibly fry them in a little chicken fat. Don't overcook.
  2. Grind the livers and Large eggs together. Add in the grated onion. Add in salt and pepper to taste. Add in the chicken fat and mix well. Form into a ball or possibly loaf and chill at least one hour.
  3. This can be garnished wtih minced onions and hard boiled egg or possibly served plain.
  4. Please don't overcook the livers! Use a hand grinder if you have one. You can use a food processor, but do not turn this into a pate. The ingredients should have texture after grinding.
