Ingredients
- 1 (1/4 ounce) package yeast (2 1/4 teaspoons)
- 1/3 cup lukewarm water (about 105 degrees F - too hot will kill the yeast)
- 1 1/2 tablespoons granulated white sugar
- 1/8 teaspoon salt
- 2 cups flour
- 3 eggs
- 1 cup melted butter
- 1 teaspoon vanilla extract
- 3/4 teaspoon ground cinnamon (optional)

%20I%20guess%20I%20just%20need%20to%20justify%20the%20purchase.%20And%20why%20not,%20if%20it%20means%20warm,%20crispy,%20yummy%20waffles?%20Besides,%20I%20need%20a%20short%20hiatus%20from%20the%20sweet%20potato%20recipes%20(I%20have%20three%20more%20to%20share!).%3C/p%3E%3Cp%3ESeveral%20weeks%20ago,%20I%20was%20watching%20yet%20another%20Throwdown%20with%20Bobby%20Flay.%20This%20was%20the%20one%20where%20Bobby%20was%20up%20against%20the%20Waffles%20and%20Dinges%20guy%20in%20New%20York.%20This%20guy%20makes%20a%20unique%20waffle%20called%20a%20%22Liege%22%20waffle.%20It%20is%20a%20Belgian%20waffle,%20but%20not%20like%20an%20ordinary%20Belgian%20waffle.%20Typically%20sold%20from%20street%20vendors,%20this%20is%20a%20yeasted%20waffle,%20all%20fluffy%20on%20the%20inside%20and%20crispy%20on%20the%20outside.%20The%20really%20unique%20thing%20about%20them%20is%20that%20they%20are%20filled%20with%20Belgian%20pearl%20sugar%20that%20caramelizes%20on%20the%20outside%20and%20gives%20a%20nice%20satisfying%20sweet%20crunch%20to%20the%20middle.%20Can%20we%20say%20Yum?!!%3C/p%3E%3Cp%3ENow,%20I've%20never%20had%20an%20authenic%20Liege%20waffle,%20so%20I%20can%20not%20call%20myself%20an%20expert%20in%20any%20way,%20shape%20or%20form.%20I%20apologize%20in%20advance%20to%20any%20of%20you%20who%20are%20Liege%20waffle%20snobs%20(I%20found%20many%20opinionated%20posts%20about%20this%20beloved%20food).%20I%20actually%20searched%20for%20Bobby's%20recipe,%20but%20since%20he%20lost%20this%20particular%20challenge,%20he%20saw%20fit%20not%20to%20publish%20it.%20Of%20course%20the%20Waffle%20and%20Dinges%20guy's%20recipe%20is%20top%20secret.%20So,%20I%20simply%20found%20a%20recipe%20that%20looked%20like%20it%20was%20authentic%20and%20was,%20at%20the%20same%20time,%20easy.%20Although%20this%20recipe%20is%20strikingly%20similar%20to%20one%20that%20I%20found%20on%20RecipeZaar,%20I%20will%20give%20credit%20to%20Whipped,%20the%20blog%20where%20I%20found%20it%20%20These%20may%20or%20may%20not%20be%20authentic,%20but%20they%20certainly%20are%20delish!%3C/p%3E%3Cp%3ELiege%20Waffles%3C/p%3E%3Cp%3EMix%20the%20yeast,%20water,%20sugar%20and%20salt%20in%20a%20bowl%20and%20let%20it%20develop%20or%20sit%20for%2015%20minutes.%3C/p%3E%3Cp%3EPlace%20the%20flour%20(and%20salt)%20in%20a%20separate%20large%20mixing%20bowl%20(I%20used%20the%20bowl%20of%20my%20kitchen%20aid%20stand%20mixer)%20and%20make%20a%20well%20in%20the%20center%20of%20the%20flour.%20Pour%20the%20yeast%20mixture%20into%20the%20well%20and%20mix%20until%20blended%20on%20medium%20speed%20(I%20used%20the%20paddle%20in%20my%20kitchen%20aid%20mixer).%3C/p%3E%3Cp%3EAdd%20the%20eggs%20(one%20at%20a%20time),%20melted%20butter%20a%20bit%20at%20a%20time,%20and%20the%20vanilla%20and%20cinnamon.%20Be%20sure%20to%20mix%20well%20after%20each%20addition%20to%20the%20batter.%20The%20batter%20will%20be%20thick%20and%20very%20sticky.%20(this%20is%20normal).%3C/p%3E%3Cp%3EI%20mixed%20the%20cinnamon%20and%20vanilla%20in%20with%20the%20melted%20butter.%3C/p%3E%3Cp%3EThe%20batter%20seemed%20thin%20to%20me%20at%20this%20point,%20but%20once%20it%20rose,%20it%20was%20all%20good.%20:)%3C/p%3E%3Cp%3ERemove%20the%20bowl%20from%20the%20mixer%20and%20let%20the%20dough%20rest%20until%20it%20doubles%20in%20volume%20inside%20the%20bowl.%3C/p%3E%3Cp%3EGently%20fold%20in%20the%20pearl%20sugar%20and%20let%20the%20dough%20rest%20for%2015%20more%20minutes.While%20the%20dough%20is%20resting,%20heat%20the%20waffle%20iron.%20Spoon%20about%20a%202%22%20ball%20of%20dough%20into%20the%20center%20of%20the%20waffle%20iron%20(this%20should%20yield%20a%20waffle%20that%20is%20about%204%22%20in%20diameter).%20%20Waffles%20will%20take%203%20to%205%20minutes%20to%20bake.%3C/p%3E%3Cp%3EI%20actually%20found%20some%20real%20Belgian%20pearl%20sugar%20at%20the%20Kitchen%20Window.%20Yay!%20One%20step%20closer%20to%20being%20authentic!%3C/p%3E%3Cp%3EThe%20result%20was%20a%20very%20tasty%20waffle!%20A%20word%20of%20caution:%20Let%20them%20cool%20a%20minute%20before%20biting%20into%20them--the%20caramelized%20sugar%20is%20much%20like%20molten%20lava.%20The%20recipe%20makes%20about%2010%20waffles,%20so%20if%20you%20have%20a%20few%20left%20over,%20they%20do%20freeze%20very%20well.%20Mine%20didn't%20make%20it%20to%20the%20freezer,%20but%20I%20did%20have%20some%20later%20at%20room%20temperature%20and%20they%20were%20still%20very%20good.%20And,%20although%20they%20are%20sweet%20enough%20to%20eat%20on%20their%20own,%20%20I%20hear%20tell%20they%20are%20mighty%20fine%20with%20some%20strawberries%20and%20whipped%20cream.....and%20oh%20how%20I%20wish%20I%20had%20some%20Nutella....%3C/p%3E%3Cp%3EOne%20thing---my%20waffle%20maker%20was%20quite%20the%20mess,%20what%20with%20all%20the%20melted%20sugar.%20It%20took%20a%20little%20elbow%20grease%20to%20get%20it%20cleaned%20off.%20Best%20to%20do%20it%20right%20away,%20while%20the%20iron%20is%20still%20warm.%3C/p%3E){kind=link}
