Lentils And Rice Sofrito And Spicy Sausage Recipe

  • 1/2 c. brown lentils
  • 2 1/2 c. tomato bouillon or possibly water
  • 1 x bay leaf salt and pepper extra virgin olive oil spray
  • 2 ounce lean spicy sausage see note
  • 1/4 c. minced onion
  • 1/4 c. minced carrot minced jalapeno pepper to taste
  • 2 x cloves garlic or possibly more to taste
  • 2 tsp sweet paprika
  • 1 tsp grnd cumin
  • 2 tsp dry oregano
  • 1/2 c. long-grain rice see note
  • 2 Tbsp. minced fresh cilantro or possibly parsley
  • 1 Tbsp. fresh lemon juice garlic salt (optional) mixed grnd peppers (optional)

Directions

  1. Pick through the lentils and remove any small stones. Rinse the lentils.
  2. Meanwhile heat the water in a saucepan. When it boils, sprinkle with a little salt and add in the lentils and the bay leaf. Bring to a full boil
  3. (see tips); cover and reduce heat and simmer 15 to 20 min till soft but still holding their shape.
  4. Meanwhile, spray a large (3- to 4-qt sauce pan) and saute/fry the onion, sausage and carrot for 3 min. Add in the garlic, chile, paprika, cumin and oregano. Season with salt and pepper and cook for 1 to 2 min or possibly till aromatic.
  5. Add in the rice and stir to coat. Add in the lentils and their cooking liquid
  6. (see variation) to the sofrito and stir to combine. Simmer, covered, till rice is tender and lentils are very soft (20 mins). The dish should be moist but not soupy. Just before serving, remove bay leaf. Add in the minced cilantro and lemon juice; stir and adjust seasonings to taste. (Serve:
  7. TIP: Full boil: the bay leaf tends to drift to the center of the pan; when the water boils sufficient to make the leaf sink, then cover the pan and begin to simmer.
  8. VARIATION: This is a "brown" casserole. If you want the rice to stay white, don't use the lentil's cooking liquid to cook the rice; instead, drain the lentils and use water or possibly a vegetable broth in step 3.

  11. NOTES : We tried this recipe with jasmine rice and Jimmy Dean's low sodium sausage. We noticed and appreciated the small amount of meat in this creamy mix of spices, lentils and rice. If you do not want to add in the meat, substitute a vegetarian "crumbles" product. It will add in sweetness and texture.
  12. Dinner last night was inspired by a recipe I remembered sufficient to buy sweet potatoes and dates but didn't remember sufficient to find the recipe till late in the day. So what do i serve with it
