Lentil Fritters Recipe

The original recipe on this calls for burghul, which I had no idea what it was. But come to find out that couscous is a substitute. If you are able to find burghul by all means use it. The directions below are for couscous, and burghul might require more cooking.

Directions

  1. Cook your rinsed lentils in 2 1/2 c water until tender, about 30 minutes.
  2. Add 1 cup boiling water to your couscous and cover with plastic for about 5 minutes.
  3. Stir the couscous and lentils together once they are both cooked.
  4. Sweat your onion in a hot skillet with some olive oil until tender and translucent.
  5. While they are cooking, add your garlic, cumin, coriander, mint, eggs and flour to the lentil mix.
  6. Stir in the onions.
  7. If the mixture isn't holding together, add a little more flour.
  8. Add some more oil to the hot pan and spoon in the fritters a little at a time. You want to make them like little pancakes.
  9. Cook about 3 minutes on each side.
  10. Serve with a yogurt sauce:
  11. 1 small cucumber, peeled, halved and seeded
  12. 1 c Greek yogurt
  13. 1 T minced garlic
  14. Grate the flesh of the cucumber into the yogurt and garlic. Stir and serve.
