Ingredients

  • 4 whole cobs of corn, (approx. 3½ cups corn kernels)
  • 1/2 cup dry black caviar lentils, rinsed
  • 1 cup (1 medium size) red bell pepper, diced
  • 2 Tbsp green onions, sliced
  • 1 Tbsp jalapeño pepper, minced
  • 4 Tbsp lime juice
  • 1 Tbsp lime zest
  • 3 Tbsp fresh cilantro, choppped
  • 2 Tbsp canola oil
  • 1/2 tsp salt
  • 1/2 tsp fresh black pepper
