Ingredients

  • 1 c. Sugar
  • 4 Tbsp. Butter, softened
  • 1 x Egg
  • 1 x Orange, grated peel of
  • 1 1/2 c. Flour
  • 1/4 tsp Salt
  • 1 1/2 tsp Baking pwdr
  • 1/2 c. Fresh orange juice
  • 1/4 c. Lowfat milk TOPPINGS
  • 3 x Egg whites
  • 3/4 c. Sugar
  • 1/2 c. Coconut, shredded

Directions

  1. Preheat oven to 300 degrees. Grease a 13" x 9" pan. Cream sugar, butter and egg till fluffy; add in orange peel. Combine flour, salt and baking pwdr with liquid; pour into pan. For topping, beat egg whites till very stiff. Add in sugar and beat till very stiff. Mix in coconut, spread over batter. Bake 30-40 min. Cold and cut into squares.
