Lemon Thyme Chicken With Rosemary New Potatoes Recipe

Ingredients

  • 3 lb Chicken whole
  • 1/4 c. Extra virgin olive oil
  • 1/2 c. Finely-minced fresh thyme
  • 1/2 c. Finely-minced lemon zest Juice of one lemon
  • 8 x New potatoes quartered, blanched
  • 1/4 c. Minced rosemary Salt to taste Freshly-grnd black pepper to taste
  • 4 x Fresh rosemary sprigs see * Note

Directions

  1. Preheat the grill. Preheat the oven to 400 degrees.
  2. In a small mixing bowl, combine 2 Tbsp. of extra virgin olive oil, fresh thyme, lemon zest, and lemon juice. Mix thoroughly. Season the chicken with salt and pepper. Rub the entire chicken with the lemon and thyme rub. Place the chicken on the grill and grill for 10 to 15 min on each side.
  3. In a mixing bowl, toss the potatoes with the remaining extra virgin olive oil, fresh rosemary, salt and pepper. Roast for 10 to 12 min or possibly till the potatoes are golden brown.
  4. Place the potatoes on the platter. Lay the chicken against the potatoes. Garnish with rosemary sprigs and Essence.
  5. This recipe yields 2 servings.
