Lemon Squares

"sheer divine"; tangy and crumbly lemon squares.

Ingredients

  • For bottom layer (crumbly crust)
  • 1/2 cup salted butter (softened; remove butter from fridge and let it stand in room temperature)
  • 1/4 cup sugar
  • 1 cup all-purpose flour
  • For the top lemony layer
  • 4 eggs (room temperature)
  • 1 1/2 cup sugar
  • 1/4 cup all-purpose flour
  • 2 lemons - juiced
  • 1/2 tsp lemon zest (only the outer part; avoid the bitter white part)

Directions

  1. For the bottom layer
  2. Crumble all the three ingredients together.
  3. Press on a greased baking pan.
  4. Bake at 160C for 10 minutes.
  5. (Note: bake longer if you prefer a compacted layer)
  6. While it’s baking, prepare the lemony top layer.
  7. For the top lemony layer
  8. Sift flour and mix with sugar.
  9. Lightly beat eggs and add lemon juice and zest.
  10. Combine both the mixtures together.
  11. Pour over crumble.
  12. Continue to bake for another 30 minutes.
  13. Remove from oven, cool down and cut into squares.
  14. Optional: dust some icing sugar on top.
