Ingredients
- 1 1/2 c. all-purpose flour
- 1/3 c. powdered sugar
- 3/4 c. butter -- hard
- 4 lrg Large eggs
- 2 c. firmly packed brown sugar
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 c. flaked coconut
- 1 c. pecans -- finely minced
- 3 Tbsp. all-purpose flour
- 1/2 tsp baking pwdr
- 2 c. powdered sugar
- 3 Tbsp. lemon juice
- 1/4 tsp lemon extract
- 2 Tbsp. butter at room temperature
Directions
- Preheat oven to 350 degrees .In a medium bowl, combine flour and powdered sugar and cut in butter till crumbly.
- Press into bottom of a tightly greased 13 x 9" baking pan.
- Bake for 15 min.
- While the crust is baking, in a large bowl beat the Large eggs at high speed till frothy. Ad sugar, vanilla, cinnamon and coconut.
- Spread proportionately over baked crust.
- Bake for 20-25 min.
- Mix the ingredients for the icing till smooth and spread over the bars while they are still slightly hot. Cold. then cut into bars.
