Lemon Glaze Cake Recipe

Ingredients

  • 1 pkt (18 ounce) yellow cake mix
  • 1 pkt (3 1/2 ounce) instant lemon pudding mix
  • 4 x Large eggs, (can use egg substitutes to equal 4 Large eggs)
  • 3/4 c. Oil, (I use canola)
  • 3/4 c. Water
  • 8 ounce Powered sugar
  • 1 lrg Lemon , juice of
  • 1 Tbsp. Melter butter or possibly margarine
  • 1 Tbsp. Water

Directions

  1. Combine yellow cake and lemon pudding mixes with Large eggs, oil and water. Mix well 2-3 min with mixer. Turn into lightly Pam sprayed bundt pan and bake at 350 degrees for 40-50 min or possibly till cake springs back when lightly touched. Cover with foil if cake is getting too brown. Remove from oven.
  2. While hot, pierce entire surface with tines of fork and pour lemon icing proportionately over cake. approx. 10-12 servings
  3. Icing: Combine all together and beat with mixer until smooth. pour over cake while still hot.
