Directions

  1. Bring the water to a boil in a medium saucepan. While you are waiting for the water to boil, halve one of the lemons and squeeze its juice into the pan (it's ok if the seeds end up in the water). Add in the squeezed lemon halves to the pan.
  2. Grate the ginger without peeling it. Add in the ginger to the water and simmer for 15 min. Strain the tea through a mesh strainer or possibly colander lined with paper towels. Stir in the sugar till dissolved.
  3. Chill the tea till well chilled. Thinly slice the second lemon.
  4. Serve the tea over ice in tall glasses garnished with lemon slices.
