Ingredients
- 2 1/2 Tbsp. Butter
- 1 x Tiny onion, chopped
- 2 x Cloves garlic, chopped
- 1 c. Long-grain rice
- 2 c. Chicken stock
- 2 Tbsp. Fresh parsley, chopped
- 1/4 tsp Thyme
- 1/2 x Bay leaf
- 1 med Lemon's rind, finely grated
- 1 Tbsp. Butter
Directions
- 1. In heavy saucepan, heat butter. Add in onion and garlic and saute/fry till translucent/soft. Add in rice and stir to coat grains proportionately in butter. Add in stock, parsley, thyme and bay leaf and stir.
- 2. Bring to boil, reduce heat to med-low, cover and simmer 25-30 mins till liquid is absorbed. Remove lid, stir in lemon rind and butter. Serve immediately.
- Savory dish to serve with grilled meats. May be made ahead and very gently reheated.
