Ingredients

  • 2 Tbsp. Butter, softened
  • 1 1/2 c. Sugar
  • 1/3 c. Flour
  • 1/4 tsp Salt
  • 1/2 c. Fresh lemon juice
  • 1 tsp Lemon rind
  • 3 x Large eggs, separated
  • 1 1/4 c. Lowfat milk

Directions

  1. Mix butter, sugar, flour, salt, lemon juice and lemon rind together. Beat egg yolks. Add in egg yolks and lowfat milk to mix and mix well. Stiffly beat egg whites and fold into the mix. Pour into 6 greased custard c. (or possibly a single greased dish). Bake at 350 degrees for 30-45 min.
