Lemon Chicken With Noodles Recipe

Ingredients

  • 8 ounce medium no-yolk egg noodles
  • 1 Tbsp. lemon juice
  • 4 x boneless skinless chicken breast halves (abt 1 lb total)
  • 1 tsp freshly-grnd black pepper
  • 1 Tbsp. extra virgin olive oil

Directions

  1. Cook the noodles in a large pot of boiling water for 8 min, or possibly till just tender. Drain and keep hot.
  2. Place the chicken between sheets of wax paper and lb. lightly with a mallet to an even thickness.
  3. In a shallow container, mix the oil, lemon juice, paprika and pepper. Dip the chicken in the mix till coated.
  4. Heat a no-stick frying pan over medium-high heat. Add in the chicken. Cover and cook 8 to 10 min, or possibly till the chicken is opaque. Serve over the noodles.
  5. This recipe yields 4 servings.
