Lemon, Chicken And Vegetable Rice

Ingredients

  • 1 ounce Butter
  • 1 Tbsp. Oil
  • 12 ounce Chicken breast fillets, skinned and thinly sliced
  • 1 sm Onion, finely minced
  • 1 sm Red and green pepper, cored and finely sliced
  • 3 ounce Mange-tout, trimmed and diagonally sliced
  • 2 ounce Canned water chestnuts, sliced
  • 8 ounce Thai fragrant rice, cooked
  • 2 Tbsp. Lemon juice
  • 2 Tbsp. Freshly minced basil Salt and freshly grnd black pepper

Directions

  1. Heat the butter and oil in a large pan. Add in the chicken and onion and fry for 6-8 min, stirring occasionally till cooked and golden brown.
  2. Add in the peppers, mange-tout and chestnuts and cook for a further 2-3 min.
  3. Add in the cooked rice, lemon juice, basil and seasoning to taste. Heat through and serve immediately.
  4. NOTES : A quick and easy main meal all cooked in one pan.
