Ingredients

  • 1 1/4 can Sugar
  • 3/4 c. Butter
  • 8 x Egg yolks
  • 1 1/2 c. Cake flour, sifted
  • 3 tsp Baking pwdr
  • 3/4 c. Lowfat milk
  • 1 tsp Vanilla
  • 1 tsp Lemon juice
  • 1 tsp Grated lemon rind
  • 1/4 tsp Salt
  • 2 c. Confectioner's sugar
  • 1/4 c. Soft butter
  • 1 tsp Cream, (or possibly more)
  • 1 x Lemon rind, grated
  • 1 x Lemon, juice of

Directions

  1. Sift sugar. Beat butter till soft. Add in the sugar gradually. Blend these ingredients till they are very light and creamy. In a separate bowl beat egg yolks till very light and lemon colored, then blend them into the
  2. butter mix. Resift cake flour, baking pwdr and salt three times and add in these ingredients to the butter mix in three parts alternately with thirds of the 3/4 c. of lowfat milk. Beat the batter thoroughly after each
  3. addition. Add in and beat for 2 min vanilla, lemon juice and lemon rind.
  4. Bake in greased 9 inch layer pans in a moderate oven (375 degrees) for abou t
  5. 20 min. Spread with Lemon Icing.
  6. LEMON ICING:Blend the sugar, butter and cream. Beat in the grated rind and the lemon juice.
  7. NOTES : Well, this one led us a merry chase. A version was posted on the net, found by a list member to be incomplete. I started looking for the complete recipe as did the original poster. I found this one by calling Cyn who called Mrs. Johnson. The copy I have came in Lady Bird's envelop e and is on the LBJ ranch note paper. Guess it's the real McCoy.
