Lemon Bundt Cake

This cake is easy and yummy and my mother-in-law's favorite dessert. Poking the holes in the cake allows the icing to seep into the cake making it super moist and lemony.

Ingredients

  • Cake
  • 1 box of lemon cake mix
  • 1 box of instant lemon pudding
  • 4 eggs
  • 2/3 cup oil
  • 2/3 cup water
  • 1 teaspoon lemon extract
  • Icing
  • 1/2 cup powdered sugar
  • Juice of 2 lemons

Directions

  1. Mix all the cake ingredients together and pour mixture into a greased and floured bundt pan.
  2. Bake at 350 degrees for about 45 minutes.
  3. When cake has cooled, remove from pan and poke holes in cake with a toothpick, or better yet, a skewer.
  4. Mix icing ingredients together and slowly pour over the top of the cake.
