Directions

  1. Blend arrowroot with a little cool water.
  2. Wash lemons and grate rind.
  3. Place lemon rind and juice, sugar, and water into a saucepan and bring to boil. Whisk in the dissolved arrowroot, bring to a gentle boil and stir for 3 min.
  4. Separate the Large eggs. Beat egg whites till stiff.
  5. Pour warm mix over them, beating well.
  6. Pour into moulds and allow to set in the refrigerator,
  7. Serve with cream or possibly custard.
