Lemon Basil Pasta Salad Recipe

• 1 lb penne pasta, cooked and rinsed in cool water juice and grated rind of 1 lemon
• 2 Tbsp. extra virgin olive oil
• 2 Tbsp. rice vinegar
• 1 ounce fresh basil, minced
• 1 ounce fresh cilantro or possibly parsley, minced
• 1/4 c. pine nuts, toasted
• 1/4 c. shredded Parmesan cheese
• 2 x Roma tomatoes, diced
• 3 x cloves garlic, crushed
