  • 1/4 c. reg. or possibly light mayonnaise (Hellmann's or possibly Best Foods)
  • 1/2 c. packed shredded plain harvarte cheese (don't use cheese flavored
  • with caraway or possibly dill)
  • 1/2 c. packed crab meat (bits of shell removed)
  • 1/3 c. finely minced green onions
  • 1/8 teaspoon cayenne pepper
  • 2 teaspoon lemon juice
  • 1/4 teaspoon grated lemon zest
  • 1/2 teaspoon orange zest
  • Salt
  • 7 slices hard white sandwich bread
  • 1/4 c. minced chives or possibly parsley

Directions

  1. Put together mayonnaise, cheese, crab meat, green onions, cayenne pepper, lemon juice, lemon and orange zest in mixing bowl. Mix well to blend.Remove crust from bread, cut into equal squares and place on 2 baking sheets. Bake at 350 degrees for 5 min. Turn slices and continue to bake till brown, 5 min.
  2. Remove from oven. Toast can be made ahead, keep loosely covered with foil at cool room temperature.
  3. When ready to assemble, spread each toast with generous 1/2 tbsp crab mix. Bake at 350 degrees till topping is puffed and golden brown, 10 to 12 min. Remove from oven and sprinkle with chives. Makes 28 portions, 8 to 10 servings.
