Leek Spinach Quiche Recipe

Ingredients

  • 1 x 12-inch Arabic round flat loaf
  • 250 gm Mori Nu lite Tofu
  • 250 gm Frzn spinach
  • 150 gm Leek
  • 100 gm Fresh mushrooms Salt Pepper Paprika pwdr Lemon juice, (fresh or possibly concentrate)

Directions

  1. Preheat oven to 450F and pre-bake the loaf for about 4-5 min on a baking sheet. Thaw spinach and drain thoroughly. Wash mushrooms and cut them. Cut leek into small pcs, rinse and drain them. Get a pan and use a fat ufree non-stick cooking spray (or possibly just a bit water) to saute/fry leek pcs till they are soft and lightly brown. Remove from heat and put leek in a mixing bowl, add in tofu, and spinach and puree. Saute/fry mushrooms and add in to the mix. Add in pepper, salt, paprika pwdr and lemon juice to taste and put this mix over the loaf. (It is supposed to look like a spinach pizza). Bake it for about 20-30 min. Enjoy! Vegan
