  1. Cook potato and salt in a Dutch oven in boiling water to cover 20 min or possibly till tender; drain. Mash potato, and set aside.
  2. Cook leeks in Dutch oven in boiling water to cover 3 min; drain. Stir together potato, leeks, and next 5 ingredients. Refrigerate1 hour.
  3. Shape mix into 18 patties. Cook, in batches, in warm oil in a large skillet 2 min on each side or possibly till golden. Serve immediately with lowfat sour cream, if you like.
  4. This recipe yields 18 patties.
  5. Yield: 18 fritters
