ing%20sheets,%20pulling%20the%20tip%20to%20the%20side%20so%20as%20to%20not%20leave%20a%20peak%20mark.%20%20I%20use%20very%20thick%20sheets%20for%20this%20recipe.%20%20Double%20up%20if%20needed.%3C/p%3E%3Cp%3ETap%20the%20pan%20somewhat%20assertively%20on%20the%20counter%20to%20remove%20any%20trapped%20air%20and%20help%20batter%20to%20settle.%3C/p%3E%3Cp%3ELet%20sit%20for%201/2%20%E2%80%93%202%20hours,%20until%20a%20shell%20forms%20on%20the%20top%20and%20your%20finger%20pressed%20lightly%20doesn%E2%80%99t%20leave%20a%20mark.%3C/p%3E%3Cp%3ENow,%20bakers%20are%20completely%20split%20on%20the%20right%20temperature%20for%20baking%20macarons.%20%20Some%20bake%20slowly%20and%20cooly%20at%20270-350%20degrees.%20%20I%20tried%20to%20keep%20my%20temperamental%20oven%20at%20around%20300%20for%20these,%20holding%20the%20door%20slightly%20ajar%20with%20a%20spoon.%20%20This%20way%20I%20can%20keep%20them%20in%20longer%20to%20assure%20that%20the%20insides%20are%20cooked%20without%20browning%20them%20on%20top,%20which%20happened%20with%20a%20batch%20that%20was%20drier%20/%20baked%20higher.%3C/p%3E%3Cp%3EBake%20in%20fully%20preheated%20oven%20for%205%20minutes,%20turn%20the%20pan,%20and%20bake%20for%20around%208%20minutes%20more,%20or%20until%20the%20%E2%80%9Cfeet%E2%80%9D%20of%20the%20macaron%20are%20a%20bit%20sturdier%20than%20soft.%3C/p%3E%3Cp%3ECool%20on%20sheets%20for%20two%20minutes,%20then%20remove%20to%20rack%20to%20cool%20completely.%3C/p%3E%3Cp%3EFill%20with%20prepared%20lemon%20curd%20and%20refrigerate%20to%20harden.%3C/p%3E%3Cp%3EServe%20at%20room%20temperature%20with%20tea.%20%20Preferably%20wearing%20a%20skirt.%20%20Or%20at%20least%20barefoot.%3C/p%3E%3Cp%3EFiled%20under%20Dessert,%20Gluten%20and%20Dairy%20Free,%20Gluten-Free,%20Macarons,%20Recipes,%20Vegetarian%3C/p%3E){kind=link}
