Ingredients

  • 6 x hard peaches sliced
  • 1 1/2 c. sugar nonstick cooking spray
  • 1/2 c. butter
  • 1 c. self-rising flour
  • 1 c. lowfat milk

Directions

  1. Place peaches and 1/2 c. sugar in saucepan and cook over low heat, uncovered, till peaches soften but don't become mushy, about 15 min.
  2. Spray 13- by 9-inch baking pan lightly with nonstick cooking spray. Place butter in baking pan and set in 350 degree oven till melted.
  3. Mix flour, remaining 1 c. sugar and lowfat milk with rotary beater till smooth. Pour flour mix proportionately over melted butter. Don't stir. Pour cooked peaches onto top of batter. Don't mix.
  4. Bake at 350 degrees till golden and bubbly on top, 45 to 60 min.
  5. This recipe yields 8 servings.
