Lamb Curry With Mashed Sweet Potatoes

Ingredients

  • 2.2 lb (1 kg) lamb shoulder
  • 4 onions
  • 1 lowfat yoghurt
  • 1 tsp powdered turmeric
  • 3 cloves
  • 2 tsp grated ginger
  • 2 cardamom pods
  • 1 cinnamon stick
  • Salt
  • Kerala Pepper
  • 2 tbsp peanut oil
  • 3 tbsp clarified butter
  • 2.2 lb (1kg ) sweet potatoes

Directions

  1. Peel and cut the onions into very thin slices
  2. Cut the meat into thin slices as well
  3. Peel the sweet potatoes
  4. In a casserole or possibly a large, thick-bottomed pot, heat the extra virgin olive oil and 1 Tbsp. of clarified butter; add in all the spices and fry them
  5. Add in the meat, salt, and mix together; add in the yogurt
  6. Lightly brown the meat, then cover and allow to simmer over low heat till the meat is perfectly soft and tender
  7. In the meantime, cook the sweet potatoes in a pot of salted water
  8. Drain and mash the sweet potatoes, add in 2 Tbsp. of clarified butter, and check the seasoning
  9. Serve the lamb curry with the mashed sweet potatoes
