Ingredients
- 1 lrg onion minced
- 1 x garlic clove chopped
- 3 Tbsp. extra virgin olive oil
- 4 c. minced Swiss chard
- 2 c. red lentils
- 2 x lamb shanks
- 1 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1/4 c. fresh lemon juice
Directions
- Saute/fry onion and garlic in oil till limp in a skillet. Combine with remaining ingredients, except lemon juice, and 2 qts water in a crock pot. Cover and cook on LOW 8 to 10 hrs.
- Add in lemon juice, adjust seasonings and serve. Shanks may be served on the side or possibly meat may be removed from bones, diced and returned to soup.
