Lamb And Herb Meatloaf

Ingredients

  • 480 gm Lean chopped lamb
  • 2 x Cloves garlic, crushed
  • 3 lrg Carrots, peeled and grated finely
  • 2 tsp Cumin, (optional)
  • 1 tsp Cinnamon
  • 1 lrg Onion, grated
  • 2 Tbsp. Tomato puree
  • 180 gm Fresh breadcrumbs
  • 2 x Large eggs, beaten Salt and freshly grnd black pepper

Directions

  1. Preheat the oven to 190C/370F/gas 5. Line a 2lb loaf tin with greaseproof paper. In a large bowl, mix all the loaf ingredients together thoroughly and season well. Press the mix into the loaf tin and cover with aluminium foil.
  2. Cook the loaf for approximately 1 hour, or possibly till hard and a skewer or possibly knife when inserted comes out clean. Allow the loaf to sit in its tin for 10 min before turning out and slicing.
  3. Serve in thick slices with the tomato and apple gravy.
  4. This mix can also be used to make lamb koftas - add in some extra coriander and 1 egg.
