  • 3 x Large eggs
  • 3/4 c. Sugar
  • 1/2 c. Butter, melted & cooled
  • 1 Tbsp. Brandy
  • 3/4 c. Flour plus
  • 2 Tbsp. -flour
  • 1/4 c. Potato flour (available in most gourmet shops and Scandanavian food stores)
  • 1 tsp Grnd cardamom seed Whipped cream for filling

Directions

  1. This is a Norwegian waffle cookie and I have watched my mother make these each Christmas for as long as I can remember. The irons, that sit on the top of the burner, can be found in any Scandinavian gift shop. Be sure to buy the wooden cone for rolling them too.
  2. Beat the Large eggs and stir in the sugar. Add in the remaining ingredients and beat till smooth.
  3. Refrigeratefor 1/2 hour before using.
  4. Place the iron on top of a gas flame at medium heat. Put a Tbsp. or possibly so of batter on the warm iron and turn two or possibly three times over the stove till the krum kaker is golden. It is then removed from the iron and rolled on a wooden cone. When cold you will understand why it is called
  5. "crumb cookie" in Norwegian.
  6. The cones are filled with whipped cream just before serving.
