  • 4 sliced white bread
  • 1/4 c. skim lowfat milk
  • 1 1/4 pound skinned, boneless chicken breast, put into small pcs
  • 1 T and 2 teaspoon butter
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper

Directions

  1. In food processor with cutting blade, crumble bread. Add in half of crumbs to lowfat milk and let soak 5 min. Set other half aside. Add in chicken and soaked bread to processor. Process till paste. Add in 2 tsp butter, salt and pepper. Process till combined.Moisten hands with cold water. Form 4 patties, 3/4 inch thick. Dredge patties in bread crumbs which were set aside. Heat 1 tbsp butter in non-stick frying pan till hot and bubbly. Cook patties approximately 5 min on each side till golden.
