Kiwi Lime Cream Pie *

Ingredients

  • 3/4 c. Sugar
  • 1/4 c. Cornstarch
  • 1/4 tsp Salt
  • 1 2/3 c. Lowfat milk
  • 2 x Large eggs beaten
  • 1 1/4 tsp Grated lime peel
  • 1/3 c. Fresh lime juice
  • 1 Tbsp. Butter or possibly margarine
  • 1 x 9" baked pie shell
  • 3 x Kiwifruits peel, slice 1/8" thick

Directions

  1. Combine sugar and salt in medium saucepan; mix well.
  2. Gradually pour in lowfat milk. Cook over medium heat, stirring constantly, till mix comes to a boil and thickens; continue cooking 1 minute. Remove from heat.
  3. Blend small amount of warm mix into Large eggs; add in to saucepan. Return to stove and cook over low heat 2 min, stirring constantly. Remove from heat. Stir in lime peel, lime juice and butter. Pour into prepared pie shell. Chill. When ready to serve, peel and slice kiwi. Arrange kiwi on pie.
