Ingredients

  • Vegetable cooking spray
  • 1/4 c. Minced macadamia nuts
  • 1/2 c. Plus
  • 2 Tbsp. Chocolate wafer cookie crumbs divided
  • 3 c. Lime sherbet, softened
  • 1 Tbsp. Grated lime rind

Directions

  1. Coat oven-proof dish with cooking spray. Spread nuts in dash and micro, uncovered high for 6-7 min till lightly toasted, stirring every 30 seconds. Combine toasted nuts and 1/2 c. chocolate cookie crumbs; stir well set aside.
  2. Combine lime sherbert, and lime rind in bowl, stir well. Spoon 1 Tbsp. chocolate cookie crumb mix into each of 6 (6 0z.) parfait glasses, top with 1/4 of sherbet mix. Spoon 1 Tbsp. of crumb mix over each top with 1/4 c. sherbet mix. Sprinkle with 1 tea. of crumbs, cover and freeze until hard.
  3. Yield 6 servings 181 calories each. Cold and refreshing!!!
