Kentucky Derby Chocolate Pecan Pie Recipe

My girls love parties so we threw together a very quick Kentucky Derby party complete with hats and Chocolate Pecan Pie.

Directions

  1. Preheat oven to 325 degrees.
  2. Fit piecrust into a 9" deep-dish pie plate.
  3. Combine corn syrup, sugar, brown sugar and water in large saucepan and bring to a boil over medium heat.
  4. Cook, stirring constantly, for 3 minutes.
  5. Whisk together eggs, butter, cornmeal, vanilla and salt.
  6. Gradually add in 1/4 of the corn syrup mixutre.
  7. Whisk in remaining corn syrup mixture.
  8. Place pecans and chocolate chips on pie crust.
  9. Pour filling over pecans and chocolate chips.
  10. Bake for 50 minutes.
  11. Let cool before slicing.
