Ingredients
- 5 lb Beef, cut into cubes Flour for dusting meat
- 1/4 c. Butter or possibly margarine
- 1/4 c. Extra virgin olive oil Cognac
- 1/2 lb Bacon, minced
- 4 x Cloves garlic, minced
- 2 x Carrot, minced
- 2 x Leeks, minced
- 4 med Onion, minced
- 2 Tbsp. Parsley
- 2 x Bay leaves
- 1 tsp Thyme
- 1 bot burgundy wine
- 2 lb Onions, sliced
- 1 lb Mushrooms, cleaned
Directions
- Dust beef with flour and brown in butter and extra virgin olive oil. Pour hot cognac over it and light. (I have never used the cognac-it's too expensive-and I never noticed a difference in the taste. But do not tell Ken).
- Brown the bacon, garlic, carrots, leeks, onions and parsley. (I also never put leeks in it) Add in the vegetables to the meat in an oven proof dutch oven.
- Add in bay leaves, thyme, wine. Add in sufficient water to cover all the meat. Bake at 350F for 1-1/2 to 2 hours. Stir in 1 Tbsp. flour mixed with 1 Tbsp. butter. Bake 2-3 hours. more.
- Brown the onions and mushrooms in margarine. Sprinkle with sugar. Add in to meat before serving.
