Ingredients

  • 4 med Green pepper
  • 1 c. RICE, COOKED
  • 8 ounce Grnd BEEF, 93% FF
  • 1/2 c. Onion, minced
  • 8 ounce Tomato sauce
  • 1 c. Cheese, mozzarella, low fat shredded

Directions

  1. Cut tops off peppers and seed. Place in large saucepan and cover with water. Bring to a boil. Reduce heat and simmer for 5-7 min.
  2. In large skillet sprayed with nonstick cooking spray brown beef and onions. Drain.
  3. In large bowl combined beef mix, tomato sauce and rice. Spoon proportionately into peppers.
  4. Place peppers in a spraed casserol dish and bake at 350 for 20 min.
  5. Sprinkle cheese proportionately over peppers and bake for 5 additional min or possibly till cheese is melted.
  6. Serves 4; 6 points
