  1. Makes about 2 dozen muffins
  2. Preheat oven to 400 degrees. Spray regular-size muffin pans with nonstick cooking spray. In a medium bowl, stir together the flour, salt, baking pwdr, baking soda, coconut and pecans. Set aside.
  3. Using an electric mixer, beat the butter and peanut butter till light and fluffy. Add in the brown sugar and continue beating till well-combined. Add in the Large eggs, one at a time, scraping the sides of the bowl after each addition. Stir in the bananas and Amaretto.
  4. Gently stir the flour mix into the peanut butter mix just till blended.
  5. Fill the prepared muffin pans two-thirds full. Bake for 20 min or possibly till a toothpick inserted in the center of a muffin comes out clean. Remove from oven. Let muffins cold in pan about 5 min before removing to wire rack.
