Keebler's Almond Shortbread Cookies

Ingredients

  • 1/2 c. butter softened
  • 1/2 c. sugar
  • 1/2 c. pwdr sugar
  • 1 x egg beaten
  • 1/4 tsp Butter Buds (powdered butter flavoring)
  • 1 tsp vanilla
  • 2 tsp almond extract
  • 1/2 tsp cream of tartar
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 3/4 c. flour
  • 1/2 c. finely-minced almonds

Directions

  1. Measure flour, cream of tartar and baking soda and set aside.
  2. Beat butter and both sugars together till fluffy. Add in beaten egg, vanilla, almond extract, butter buds, and salt. Beat all ingredients till well blended. Add in flour, cream of tartar and baking soda mix about a third at a time and beat till smooth. Dough will come away from the mixing bowl and will look a little dry. When cookie dough is blended stir in almonds, a spoon works much better. Refrigeratedough for 30 to 45 min.
  3. Roll cookie dough into 1- to 1 1/4-inch balls and place on a ungreased cookie sheet. Flatten balls till they are about 1/4-inch thick. Bake the cookies in a preheated oven at 350 degrees for about 12 to 15 min till lightly golden brown. Remove cookies from cookie sheet and place on paper towel to cold.
  4. This recipe yields 48 cookies.
  5. Comments: We found which using the product Butter Buds to be a great way to add in butter flavor into the cookies.
