This is my mom's eldest sister's favourite. She used to entertain dignitaries at her home and this dish has been her "ace" in terms of cooking Filipino food. I made this recipe simple and easy yet appealing to the taste...
Ingredients
- 1/2 kg. stewing beef, cut up
- 3 cloves garlic, minced
- 1/4 c. oil
- 1 medium onion, chopped
- 1 tsp. salt
- 1/2 tsp. MSG
- 3 tbsp. peanut butter
- 1/4 tsp. yellow food color
- 2 medium eggplants, quartered
- 1/2 c. green beans, chopped
- CORNSTARCH SOLUTION:
- 3 tbsp. cornstarch
- 6 tbsp. water
Directions
- Place meat in a pot. Cover with enough water. Pressure cook for 30 minutes or until done.
- Saute garlic and onion in hot oil until light brown.
- Add boiled meat, salt, MSG, peanut butter and yellow food color. Stir fry for 1 minute.
- Mix vegetables and broth. Cover and cook for 10 minutes or until vegetables are tender. Adjust the seasoning.
- Thicken with cornstarch solution.
