  • 1 quart unfiltered apple juice (or possibly other fruit juice)
  • 4 Tbsp. agar-agar flakes
  • 2 Tbsp. Kudzu

  2. Making a basic kanten is a good way to learn to use agar-agar and kudzu.
  3. The proportions given below make a hard gel which's ideal for pureeing. If you add in fruit, adjust the amount of liquid as we have in the Peach Kanten
  4. (see following recipe). Dress up this simple dessert by serving it with one of the creams given here and topping it with fresh fruit.
  5. IN MEDIUM SAUCEPAN, combine juice and agar flakes and allow to soak till all of the agar has dissolved, about 10 min. Bring mix to a slow simmer and cook 15 min. Dissolve the kudzu in a small amount of water, whisk it into the agar-agar mix and cook 15 min. Pour mix into a shallow casserole dish, bring to room temperature, then chill till set, about 1 hour. Blend in a food processor just till smooth.
  6. Chill till ready to serve.
