Ingredients
Dough
3 Cups flour
1 Cup warm water
3 Tbs. Olive oil
1 Tsp. Salt
Filling
1 Lb Ricotta
1 Lb Mozzarella
1/4 Lb Feta
1 Cup chopped spearmint
4 Eggs
Directions
Place flour into food processor and pulse adding salt and olive oil, slowly add water a little at a time, until the dough becomes a nice firm ball.
Allow dough to rest
Blend ricotta, mozzarella, feta, spearmint and eggs into a large bowl and blend thoroughly.
Cut dough into strips and use a rolling pin to flatten, after flattened feed into a pasta roller and click on thickest feed, and continue to feed making ribbon thinner and thinner. When the dough is the thickness of a won ton cut circles with either a small espresso saucer or a small 2 inch cutter (you can cheat and use Won Ton wrappers- They aren't as tender but will do)
Spoon mixture into middle of each small circle and crimp the dough into the middle.
Brush with egg wash and sprinkle with sesame seeds.
