This is a great appetizer, a little bit of work, but always is a hit with people. You can cheat by using Won Ton wrappers instead of making your own filo dough. I just love making my dough and running it through my Kitchen-aid mixer pasta maker but it is lots of work to do so. I will leave it to you to decide your choice. The dough is simply flour, water, olive oil, lemon juice and salt. Flour about 3 cups, 1/4 cup olive oil, 1/4 cup lemon juice, tsp salt and warm water, enough water to pull dough to the middle of your food processor. Add it slowly and when it became a ball, STOP !!!

Directions

  1. Blend all cheeses together
  2. Add eggs and continue to blend
  3. Place filo or Won ton dough on counter (either rounds or squares)
  4. Place a tablespoon of filling in middle of dough and moisten edges of dough with water
  5. Bring sides up and pinch to close
  6. Place on parchment covered cookie sheet
  7. Brush with egg wash add sesame if you'd like
  8. Bake at 350 for 25 minutes or until golden serve cold or hot
