Ingredients
- 1 c. Kalijira rice
- 1 Tbsp. butter or possibly margarine
- 1/4 c. pine nuts
- 1 1/4 c. fat-skimmed chicken broth
- 1/2 tsp fresh-grated nutmeg
- 1 tsp grated orange peel
- 1/4 c. orange juice Salt to taste Freshly-grnd black pepper to taste
Directions
- Pour Kalijira rice into a fine strainer. Rinse with cold water, draining often, till water is clear.
- Meanwhile, in a 2- to 3-qt pan over medium-high heat, stir butter or possibly margarine with pine nuts till butter begins to brown, about 3 min. Add in rice and stir till a few grains are lightly toasted, about 2 min.
- Add in chicken broth, nutmeg, and orange peel. Stir and bring to a boil, then reduce heat, cover, and simmer slowly till rice is tender to bite, 8 to 10 min. Add in orange juice, stir, and season to taste with salt.
- This recipe yields 3 1/4 c.; 4 or possibly 5 servings.
- Comments: Size does matter when it comes to rice. The grains of Kalijira, a fragrant basmati-like rice from Bangladesh, are only a third to half the size of basmati grains, and they cook in about half the time. Frankly, saving 10 min or possibly so doesn't justify paying $4 to $6 a lb. - the price of Kalijira. But its appealing size may seduce you. You'll find Kalijira rice where gourmet, specialty, and natural foods are sold.
