  • 1/2 cup chopped leeks or green onions
  • 1/2 red bell pepper, chopped
  • 1/3 cup sliced almonds
  • 4 cups water
  • 6-8 tomatoes, chopped, or 1 can (14.5 oz) unsalted diced toms, undrained
  • 2 T veg broth powder
  • 1T sweet paprika
  • 2 bay leaves
  • 2 cups chopped kale
  • 1 cup cooked brown rice
  • 1 cup cooked or can garbanzo beans, drained and rinsed

Directions

  1. Put leeks, pepper, and almonds in a large soup pot over med high heat.
  2. Add 3-4 T water, 1T at a time, and cook, stirring frequently until water evaporates and onion is translucent.
  3. Stir in remaining water, toms, veg broth powder, paprika, and bay leaves and bring to boil. Stir in kale, rice, and beans.
  4. Decrease heat to med low and simmer 10 mins, or until heated.
  5. Remove bay leaves.
