  • 1 pound fresh pizza dough (homemade or store-bought)
  • 1 tablespoon olive oil, plus additional for brushing
  • 1/2 yellow onion, diced
  • 2 cloves garlic, minced
  • 2 cups chopped kale, ribs and stems removed
  • 1 cup mushrooms
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup Parmesan cheese
  • 1/4 teaspoon dried basil
  • Pinch of crushed red pepper flakes
  • Salt and freshly ground black pepper, to taste
  • All-purpose Gold Medal Flour, for dusting the counter
