,%20garlicky%20saut%C3%A9ed%20kale%20(yes%20yes!),%20black%20beans%20(yeeees!)%20%E2%80%93%20and%20not%20much%20else,%20meaning%20very%20little%20washing%20up%20(I%20think%20I%20might%20explode).%20The%20combination%20is%20unbelievable%20%E2%80%93%20the%20avocado%20makes%20the%20whole%20thing%20taste%20really%20creamy,%20the%20kale%20gives%20a%20gorgeous%20texture,%20and%20the%20black%20beans%20are%20little%20nuggets%20of%20happiness%20dotted%20through%20the%20whole%20thing.%3C/p%3E%3Cp%3E(obnoxious%20enough%20for%20you?)%3C/p%3E%3Cp%3EThe%20only%20other%20thing%20I%20added%20was%20a%20pinch%20of%20hot%20chilli%20powder%20to%20lift%20the%20creaminess%20up%20a%20level.%20Of%20course,%20if%20you%E2%80%99d%20rather%20a%20creaminess%20overload%20with%20nothing%20to%20cut%20through%20it,%20you%E2%80%99re%20very%20welcome%20to%20leave%20out%20the%20chilli%20powder.%20It%20would%20still%20be%20pretty%20special,%20but%20I%20liked%20the%20pop%20of%20flavour%20the%20chilli%20brought.%3C/p%3E%3Cp%3EI%20served%20my%20wraps%20/%20burritos%20/%20bundles%20of%20joy%20/%20whatever%20we%E2%80%99ve%20decided%20to%20go%20with%20as%20a%20cold%20lunch,%20but%20if%20you%20wanted%20to%20make%20a%20dinner%20out%20of%20them,%20they%E2%80%99d%20be%20just%20as%20good%20(maybe%20even%20better?)%20if%20you%20baked%20them%20for%20a%20few%20minutes.%20The%20tortillas%20would%20crisp%20up%20a%20bit,%20and%20everything%20would%20be%20nice%20and%20warm.%20With%20a%20dollop%20of%20salsa%20and%20a%20side%20salad,%20they%E2%80%99d%20make%20a%20great%20Mexican-style%20dinner.%3C/p%3E%3Cp%3EOh,%20and%20did%20I%20mention%20that%20these%20burritos%20are%20vegan%20too?%20Avocado%20makes%20a%20great%20substitute%20for%20cheese%20or%20sour%20cream,%20as%20you%20get%20all%20the%20creaminess%20with%20none%20of%20the%20dairy.%3C/p%3E%3Cp%3E1%20very%20large%20handful%20curly%20kale%201tbsp%20oil%202%20cloves%20garlic,%20minced%20%C2%BC%20tsp%20hot%20chilli%20powder%20Salt%20Black%20pepper%20100g%20cooked%20black%20beans%201%20small%20avocado%202%20large%20flour%20tortillas%20%20%20Instructions%3C/p%3E%3Cp%3ERemove%20any%20tough%20stems%20from%20the%20kale,%20and%20chop%20the%20leaves.%20Heat%20the%20oil%20in%20a%20frying%20pan,%20and%20add%20the%20minced%20garlic,%20chopped%20kale,%20and%20chilli%20powder%20(if%20using).%20Cook%20over%20a%20medium%20heat%20for%20a%20few%20minutes,%20stirring%20regularly,%20until%20the%20garlic%20is%20soft%20and%20fragrant%20and%20the%20kale%20has%20softened%20slightly.%20Season%20generously%20and%20add%20the%20black%20beans.%20Cook%20for%20another%20couple%20of%20minutes%20until%20the%20black%20beans%20are%20warm%20(alternatively,%20if%20you're%20serving%20your%20wraps%20cold,%20just%20add%20the%20beans%20and%20set%20aside).%20Roughly%20mash%20the%20avocado,%20and%20spread%20it%20over%20the%20tortillas.%20Add%20the%20kale%20mixture,%20and%20roll%20the%20tortillas,%20tucking%20in%20one%20or%20both%20ends%20to%20seal.%20Serve%20warm%20or%20cold.%20%203.2.2925%3C/p%3E){kind=link}
